(jj) Chocolate Chicken Mole

Serves: 3

Ingredients

1/4 teaspoon chili powder

1/4 teaspoon cinnamon power, ground

½ teaspoon cumin powder

½ teaspoon sea salt

1. 25 oz. (35.4 g) dark chocolate 70% or above

2 tablespoons creamy almond butter

2 ½ dried New Mexico chili peppers rehydrated and chopped

3-4 whole tomatoes peeled, seeded and chopped

2 cloves garlic crushed or minced

½ medium onion chopped

1 tablespoon ghee

Sea salt

Black pepper to taste

1 lb. chicken pieces bone in breasts and legs, without skin

Cilantro, avocado and jalapeno, chopped

Directions

1. Season the chicken with salt and pepper and set aside. Put a pan over medium heat on a skillet then add in ghee.

2. Once melted, add in chicken and brown it on both sides. If the chicken is large, you can do it in batches.

3. Now transfer the chicken to a crockpot. Then add in onion to the pan with chicken then sauté until golden. Add in garlic and sauté for about a minute or so.

4. Once done, move the garlic and onion to the crockpot along with spices, salt, dark chocolate, almond butter, chili peppers and tomatoes.

5. Cook until the chicken is tender and can easily pull about, or for about 6 to 8 hours

6. To serve, top with jalapeno, cilantro and avocado.
